Certain legislation lays legal obligations on proprietors of food businesses to ensure that the food and drink they store, produce and sell is safe and conforms to the current safety standards. This requirement is now stipulated in the Regulation (EC) 852/2004 and the Food Hygiene (England) Regulations 2006, which came into force in January 2006. Ensuring ongoing control of certain food safety risks, they also state that food business operators must have a documented food safety management system in place.
Every year, 5.5 million people in England and Wales suffer from food-related illnesses by consuming food or water that has been contaminated by micro-organisms or toxins, such as; salmonella, campylobacter, listeria and e.coli. This type of contamination usually occurs as a result of the poor understanding of food safety and poor hygiene practices.
